A little blast from the past … since my last post was back in September 2014…
Christmas was fun. The children got quit a good amount of …everything! Their biggest and best gift from Santa was their iPads. They are constantly on them! Their dad agreed they could have them if they would use them for school also!
Now, we are busy in the middle of Girl Scout Cookie sale season, planning for Hayleigh's first pageant and Hayden getting signed for a travel baseball team.
So our calendar stays pretty full…more than usual.

Here we go again...
I've been such a slacker! For real! I can't tell you the last time I've actually taken the time to sit down and write up a blog post. But guess what…it's on like Donkey Kong! My goal….is to do at least 3-4 post per week. They may be short and sweet, but they will be here.
Lots going on at the Campbell plantation. Between kids back at school, extra activities feeling up the calendar from dance, cheer, Girl Scouts, Boy Scouts, baseball, baseball, baseball, Junior Woman's Club, High School Juniorettes, work, social media marketing, deer hunting season, Church, family, and so on and so on and so on…. So…where is the time to actually write a good post? Who knows but we will find a few moments to work it in! I promise!
Okay, from start to finish this past week was as crazy as the above paragraph. See here is a photo of Izzie helping me pick up daddy after work. Mike drives his van to and from work most days, but when he's not on call he actually drives his own personal truck. Today was a "pick up daddy" day. She does love to know her daddy is home!

Girl Scouts- I'm on the Harnett County GS Administration board, which means I help plan and oversee what all is happening in the Harnett County GS division. On this board, I serve as the Media Coordinator, which basically puts me in charge of posting articles into the local newspapers, social media sites and etc. Tonight we discussed Girl Scout Cookie sales, which begin in January. You will soon see lots of pics and post about that.

Fit to Finish!
So seriously trying to loose some pounds! I went to the doctor Wednesday of last week...got up on the scales and almost started crying right there with Anita. Anita is Dr. Thomas' nurse who just totally rocks! Since my cancer treatment I've really came close with all the girls in his office, mostly Anita, his nurse and the gal who draws my blood. Since I have to have blood work about every 3 weeks.
Okay, so anyways, back to the post for today...
When I saw that those scales said 196.8 I almost cried! Yes, I said 196.8. That's basically 200 pounds!!! So that moment I FULLY decided I can't allow myself to see 200 on any scales! I prayed to God that I needed to loose weight and asked for his help. I enjoy the flavor of food, I have a true sweet tooth, I munch all the time; set aside the medical conditions that I face, this don't help me with my weight. I asked God to help guide me to what I need to face daily. I want to loose weight. I want to physically feel better and I want to feel better about myself!
That night at church, my dear friend, Kristi (who has lost a ton of wait with Curves), mentioned that she and another gal have been walking every morning at 5:30. What!?! Ya'll live three blocks from me and ya'll been walking and I not even know it.... really! So, guess what I done Thursday & Friday...Yep, walked! We done 3 miles both days and then on Saturday I got another 3 miles in all by myself. We live right here in town and it was so nice walking downtown. I use the app "MapMyRun"...totally love it!
So not only have I started walking but I'm doing so much better with my eating. It's honestly a testimony how God intervenes with taste and cravings. I've done so good! After my walk, I return for a good hot shower, then I enjoy a tasty sandwich - egg white, grape tomatoes, spinach, mushrooms with grilled chicken strips on multi-grain bread with just a tad spread of blackberry jam. Yum! Yum! Other mornings I enjoy a tasty Egg White Bite. I make these up ahead of time and normally grab one with a cup of yogurt and out the door to work I go.

*First, I spray down a muffin pan with cooking spray. This helps keep the coat the bottom so they don't stick. Preheat the oven to 350F.

**Second, I cut and lay out all the ingredients I want to include. I used: spinach, mushrooms, pepper jack cheese (like a little kick), grape tomatoes, egg whites. I mix just a little bit of almond milk with the whites just to give them a little more fluff.
Once they are fixed I fill each muffin tin with egg white mixture. When using the mini muffin tins, it only takes about 1 T. of egg whites to fill it.
***Lastly I sprinkle a little flavoring on top, I love Lemon Pepper! Bake for about 15mins. Once they cool you can enjoy them with salsa or even by themselves!
I enjoy them all week long by making up enough at once. Such a good snack for grab-n-go!

Wright Brothers Memorial
We recently took a trip to the Wright Brothers Memorial in Kitty Hawk, NC. We left on Friday and stayed the weekend with Uncle Bobby at his new house. We enjoyed our visit with him. He's only been in his new house about a year now and this was our first time seeing it, other than in pictures. Our visit I think is what was best.
We got up Saturday morning and headed from Elizabeth City on down to Kitty Hawk. We really didn't have much time, b/c Uncle Bobby had to be back at 4pm for a church event. Who knew I was so out of shape! That was a lot of walking.
The kids and the men, enjoyed the History Lesson! We talked about how much history we actually have here in North Carolina.
We live about 3 hours from Uncle Bobby and it's about an hour drive from his house to the Outer Banks area...so obviously when we left, Hayleigh took a nap. This was after our bellies got full at a quant little restaurant in Duck, NC.
Ohhh...it was sooo good! I'd love to have a 2nd home at Duck.
We hope to get back soon to visit with Uncle Bobby. It was so nice to visit his Church also. Here is a link to their website, Pastor Hans had some strong words. Take a listen to the podcast. Fountain of Life Church
